This is what we do:
Prep (cut, defrost, whatever...) all the veggies that you want to use: mushrooms, broccoli, red pepper, peas, green beans, eggplant...
Defrost the shrimp (and peel) or the chicken (and cut into bite-size pieces).
Make jasmine rice. Use a rice cooker if you've got one.

Thanks for this. I'm definitely going to try it, maybe for Friday night's dinner.
YAY!!!
Just so you know, we made it with rice noodles tonight. They didn't stick together (I learned the trick of not making them too early in the process) BUT, the problem with curry over rice noodles is that there's no absorbency. You're eating your curry mixture and you're eating your rice noodles (with no curry). When you make it with RICE, the rice absorbs the curry sauce so the rice is infused with curry goodness.
Salmon, avocado and Pinto beans. I may sip a little Coconut water with it, and if I do I'll have a couple of teaspoons of raw, unpasteurized and unfiltered apple cider vinegar in it. Perhaps a tad of Pomegrante/Cherry juice stirred in to give it more flavor so it's at least palatable cuz it's so dang healthy.
I may also put a small piece of sharp cheddar into the mix.
I had a buy one/get one coupon for original chicken sandwiches at Burger King. I had one of them tonight and I'm saving the other one for lunch tomorrow.
Sirloins and ribs and the works at Texas Roadhouse. Dessert Brownies and strawberry shortcake topped with ice cream.
wow, was it a special day or you just wanted to eat out and enjoy a really good meal, it sure sounds good.
