We're having a freak hot spell (those poor runners in the Boston Marathon!) so -- and this is also a freak occurrence -- I'm not very hungry. My husband is working late tonight so I think that I'll just make myself a huge salad with spinach, mushrooms, grape tomatoes, and broken-up pretzel pieces for some crunch.

I'll make extra salad for him and also give him a choice of bagel, cream cheese and lox... or asiago bagel with turkey bacon.

There's some roasted cauliflower left over, so maybe I'll have some of that too.

Shake & Bake porkchops, creamed corn, butterbeans mixed with butterpeas, salad. I need to make something with potatoes - DH brought home a 10lb bag of Idaho, and a 10 lb bag of red-skin potatoes. I need a simple baking recipe for potatoes. I don't want to fry them.
