I made this recipe called Ranch Chicken and Bacon Casserole. It was good, kind of a new spin on mac and cheese. And I have been finding some yummie, new recipes on Pinterest.

Tonight: Tupy's in Frisco, TX. Had beef enchiladas with chili, refrieds, Mexican rice, flour tortillas, chips, salsa, Shelby Metcalf dip (queso with sour cream, ground beef, and guacamole), and iced tea.

My once-a-week cooking spree/buffet: Chicken Chowder w/Corn, Chicken Breasts with Sherry/Wild Mushroom Cream Sauce and a Beef/Spinach/Cheese and Sour Cream Dish.

And I've been staring at that tempting Fudge Ripple Layer Cake on the front of my Traditional Southern Cookbook, for too long, and finally made it, but it wasn't as luscious as it looked! I guess my expectations were too high!

From my new Chocolate Cookbook, I see a recipe for chocolate dipped Truffles, looks so easy to make, that's next on my agenda, never made any candy before!
