going to a friend's house for dinner tonight and she is making Mexican. Pork, chicken and steak enchiladas. Never had an enchilada but I am excited to try it.
I will be fixing braised pork, with veggies and a fruit salad. This is an easy dish for me cause I can prepare it ahead of time, stick it in the oven and when I get home from a dumb church meeting it will be ready. I hate meetings, especially late in the afternoon or early evening. Luckily it should be very short, maybe just 15 minutes or so.
Spaghetti w. red sauce & ground turkey.
Side salad & garlic bread.
