Tomight is going to be: try it, you will like it night. I have a bunch of baby shrimp left from making shrimp salad the other night, I have lots of Ramen noodles and some mushrooms that are about to crock for sure. I am going to get creative, mix them all together, with a little onion, soy sause, ginger and basil. Now, I need to think of a name for it. Of course we will have green salad with tomatoes as well. I can't believe I am really making dinner using Ramen, but it just sounded like a fun and easy dinner.
Shrimp stir-fry! Just go back from a vacation, and going on another short weekend trip this Thursday evening... so using up the things in the fridge that I don't want going bad. Shrimp, red and yellow pepper, green onions, pearl onions, spinach, and I'll probably throw in some frozen broccoli florets too. Easy and quick! I'll serve it over fresh udon noodles that my husband bought on impulse when he last went to the supermarket.
ETA: I also have some egg I need to use. Not convinced about shrimp and eggs, or egg in a stirfry altogether... I do use it in fried rice. I'll have to figure something out for that... maybe breakfast for dinner tomorrow?
Crockpot BBQ beef on buns, potato salad and 3 bean salad. We already blazed a trail through the leftover buffalo chicken dip. Chocolate cake, Pineapple Pie and Brownies.
