Herb marinated chicken thighs and a mushroom risotto (risotto is not home made-- Trader Joe's!).

Light supper but good! I've been wanting a ham sandwich for awhile and would say, "oh there's something else for lunch" or "get these sale specials!"

Hot Virginia ham and cheese sandwiches on onion buns, potato salad, white grapes and almond coffee cake for dessert. I did not make the coffee cake. It was on sale in the deli and cheaper than you could buy the ingredients and cook it.

Smoked neck bones, served with Yukon Gold potatoes and Kentucky Wonder green beans
Corn on the cob

Concord grapes with a slab of Maytag Blue Cheese

I made a hearty chili with beans, zucchini, mushrooms, corn and lots of other veggies, served over rice.

Sunday night we had leftover chili that I had made on Friday. No supper on Saturday because hubby had a migraine and didn't want anything, so I snacked on salsa and chips.


Monday I am making chicken with a cream cheese sauce and veggies over a bed of linguini, with garlic bread and salad...yum!!!!

Leftover Chinese food from lunch, plus some concord grapes and a side of steamed broccoli. The Chinese food was a couple pieces of black pepper chicken, a few pieces of barbecued pork and a small serving of fried rice.
