Now, I did cheat and doctor up canned black beans but they smell so, so good.
That reminds me, I have half a can a refried black beans left in the fridge. Guess I'll have those for dinner before they go bad. I only have hot sauce to put on them tho ... your black beans sound delicious with all the added goodies.
I have black beans and yellow rice waiting. Now, I did cheat and doctor up canned black beans but they smell so, so good. I added some green onion (white and green parts), fresh diced garlic, paprika, cayenne pepper, diced bacon and a little chicken broth. When serving my beans I use lime wedges, chopped hard boiled egg and a little more diced green onion as garnishes. Along with this is Cuban bread, a salad and steamed broccoli. For dessert vanilla ice cream will be topped with fresh pineapple slowly cooked in some butter, spices, lime juice and brown sugar. This makes a nice syrup type topping to go over the ice cream.
One of my favorite meals is roasted chicken, yellow rice and black beans!
(and I did taste the fig pastries at Publix last week )
Lily: I wish I could have shared my bean dish with you! Be sure and try the beans with all of the goodies when you can.
NaAL: what did you think of those fig pastries? (I can't find my smiley things!). I have some pie crust left from another meal -- Italian Pie I think -- but the little "figgies" won't get made any time soon! The roast chicken and beans sound fantastic.
My ice cream was good, too! Now if only I didn't have to finish cleaning up!
