Meatless Monday: Stuffed Peppers-- Chopped up peppers, zucchini, onion, garlic, quinoa, cheese, and truffle oil. Serve with french bread.

I made petite top sirloin steaks, sauteed with olive oil, balsamic vinegar, and worsteshire..they were very tender...We ate them on buns with a little bit of Sweet Baby Ray's bbq sauce on them..

I didn't make any side dishes but we ate a package of vanilla oreos and milk for dessert..

(I need to go vegan again)
