ok, I save all my unused bread thoughout the year and use it for my turkey stuffing. This year I had way too much so I made bread crumbs. What I need to know, if anyone has the answer: how do you keep homemade bread crumbs from molding?

Keep them in the freezer in an airtight container.

Put it into a sack or container and stick it in the freezer if you have room. Otherwise the bread needs to be dried out (I put mine on a cooky sheet and stick it in the oven on about 250 until it dries). Then it should be shelf stable for quite a while.

thanks everyone, I did toast them first, but not all of them got completely dry, so I will do the freezer thing.

good idea, I will do that next time. I have 3 quart size bags of crumbs ready to go to the freezer. I even seasoned them.

I put mine in the microwave... after they 'cool', the microwave draws out all the moisture from the bread (Seasoned before I do that, and only for about 30 seconds at a time, come out, let cool-->they cool quick-->pop back in for another 20 seconds ...repeat til dry).

If you try to keep them in anything but the freezer, they will 'wick' moisture out of the atmosphere and mold, so, unless you have a dessicator-->only seen in labs, its the only way to keep them, in the freezer
