I saw Dr. Oz on "the talk". They were talking about Milk. he said Skim milk was bad. That if your going to drink milk drink 2%. all these years they've been telling us to drink Skim.
Oz also said that coconut milk was better overall than soy & almond milks.
Can anyone give us their 5 cents worth on this subject.
My wife has been using a lot of coconut milk. Recently, we have been noticing that the coconut milk has been separating ... the fats is separating from teh water.
Is this an indication of a bad can? We have seen this happen in several of the cans from different brands.

No, I do not believe that it is bad. That is what happens if you place it in the refrigerator.
Remember that coconut milk is not really milk. It has a high content of fat that is good for you. You just have to stir it up.
Coconut cream contains oil. And oil & water tend to separate. So, it is normal.
When I make coconut milk, I place it in the refrigerator, so it will separate, so I can capture the oil part of it.
So, bottom line, it is OK to drink, just stir it up It is fine.
If it smells rancid, then that is a different story, but separation is normal.

It's fine. It will separate with just sitting. If I don't need to use just the cream first, like in some curry recipes, I always shake the can before opening to combine it back together.
I like to put it in the refrigerator and then scoop off the "cream" at the top to use as topping for various desserts. It's very good dusted with a touch of cinnamon on top of butter and sugar fried plantains.

I recently saw a recipe for vegan icing that scooped off the solids from from the coconut milk can and used that as a base (in place of butter.)
I like to make whipped cream with from coconut milk.
Refrigerate a can for at least 8 hours. Put a metal mixing bowl and beaters in the freezer for an hour.
Open the can and use a spoon to scoop out the solids and put them in the cold mixing bowl. Beat on medium briefly and then turn up to high. Beat until stiff peaks form. Add in sugar and vanilla to your tastes.
