Make jars of salad on Sunday night that you can just grab to bring to work. If you layer the ingredients correctly, the salad stays fresh for up to 4 days.
All you need is a jar with a lid and salad ingredients of your choice

Example:

dressing
onions
mushrooms
tomatoes
spinach

Other adds on you can put in small zip-locks and store in your desk: smoked sundried tomatoes, toasted almonds, some dried fruit like cranberries or blueberries, seeds, Fiber One for extra crunchy taste, or any other healthy cereal with fiber.
The most important part of the layering is making sure the dressing and the spinach (or whatever "leaf" you choose) don't touch. As long as they stay separate, these salads can be made up to 4 days in advance and will stay fresh in the fridge with a lid on.
Make a few jars on Sunday night and just grab one to bring to work everyday. When you're ready to eat, just shake it up.

BTW: If you have a vacuum-pack machine with a wide-mouth jar attachment, then your salad will stay fresh for 10 days!
Note: it does not work well with spinach or spring mix. I wish it did!

Wow great idea! What layer do you put your drink in?? I can't keep salad fixin's fresh for 10 days separated... It really is a great idea for those that take salads for lunch! Saves $8.00 to $18.00 for a salad at the local restaurant too! According to the salad thread!
