Yes, that's a recognizable concern.

However, there is already, and for a long time, kosher bacon, bacon made from the same part of the cow that pork bacon comes from in a pig, and marketed as Breakfast Beef or Beef Frye.

It just doesn't taste like -pig- bacon. It sounds to me that jlawrence knows the score. The subs, chicken, turkey, goat, cow bacon just doesn't taste like the real deal. Vegetarian 'bacon strips' are terrible. I've tried all of them.
