I am going to try making homemade cornbread with either shrimp or sea scallops inside of it. I'm just wondering if anyone else thinks that this would be *maybe* a yummy thing?
I have a very big area of imagination with the foods that I cook.

I'm assuming the seafood is already cooked? If not I would think it would be to soggy?

How about just making a seafood gumbo with a side of CB. That sounds yummy.

We've experimented with shrimp and cornbread, but what we found that we like better is a casserole made from leftover cornbread with shrimp and crabmeat!

I's stir a little Lobster Base in with the batter. And, I'd use cocktail shrimp (you know, those little tiny ones that people put whole into dip). They don't taste like much but they won't have to if you use some lobster base. Also, I think I add some cayenne pepper to the mix tooo.

IMO, I would NOT cook the seafood first, but would try to accomdate for moisture level. It may take some experimentation, but the seafood is going to cook with the bread, so if you put it in raw it will 1) not dry out, and B) impart more flavor into the dish.

At a party once, in an alchohol induced flurry of creativity, I added smoked NC BBQ (pulled pork) to Hushpuppy Batter, which was then deep fried in a turkey fryer. WOW was that delicious, and the flavor permiated the entire hushpuppy, or as I called them at the time, Q-Fritters.

If your cornbread idea does not work out, you may try making "fritters" with hushpuppy mix, and the seafood of your choice.


Also, if it were me, I'd add a small amount of Old Bay seasoning to your mix, and some onions, to round out the flavor.

Please report back on results, and if it's a success, please share your recipe. If I get creative, I'll do the same!
