Thank you!! And thank you Dawn for the thread! I'll check it out. I'm a total pansy when it comes to anything remotely spicy. I cry over Wendy's chili for pity sake! So I think I'll stick to trying it with more mild seasonings!

Chop up two or three leftover boneless chicken breasts (which we almost always have), add 8 cups water, Better than Bouillon, 1 big bag frozen veggies. Season and simmer for a little while, then eat. Also works with frozen cheese tortellini instead of chicken.

I've only done them the way I posted the original recipe. It's a really good snack, but that's all it is -- a snack.

I buy the 5 Lbs bag of Polska Kielbasa at Costco and when I forget to defrost something, I pull out a loop and sautee it with sliced onion and sweet peppers. I mcrowave some rice and thats dinner in less than 20 minutes!

^^^ These comments are closest to what I do as well.

When cooking pasta, I always fix enough to freeze some...then just remove and defrost in microwave=perfect. Jarred sauce and fresh cheeses then make a quick meal. Or saute bits of leftover veggies in olive oil/garlic. Pasta added in thin soups, easy mac/cheese or mixed in with salad for a heartier meal.

Love to get ideas for v-e-r-y fast meals

Speaking of canned soup, I always keep a few cans of cream-of broccoli, celery, and mushroom on hand. They make great bases for other meals.

Broccoli soup with with real (frozen) broccoli and cheddar cheese, served with crusty French bread and a salad.

Black beans rolled in a whole wheat wrap with the greens and some salsa.

Chickpeas heated with canned diced tomatoes and a bit of curry powder. Add lemon and spinach at the end. Serve over basmati rice.

Those are just a few off the top of my head.

We freeze the ravoli from Costco - that and bag o'salad and can o' biscuit makes a quick meal..

Also "breakfast for dinner" - omelets and canadian bacon (also frozen)

And 'taco rice" - taco fixings served over white rice (this is popular in Japan)

I LOVE breakfast for dinner!! I feel guilty doing it with a little one in the house - feel like I should have at least a couple veggies at dinner - but it really is a guilty pleasure for me!

Breakfast for dinner is always an easy go to meal.

When I'm sick, I like comfort food like grilled cheese and tomato soup or macaroni and cheese.


One of my easy cheat meals which hubby loves is roast beef and gravy or turkey and gravy using sliced cold cuts and packaged or jarred gravy. It's super easy and you can add sides for a filling meal

I try and do Western Omelet with whatever veggies we have on hand.

I can empathize. I lived in rural Florida years ago and the nearest grocery store was 20 minutes away on a bumpy, non-paved, road. I did enough cursing to last a life time when I lived there. I swore never again.
