That's why I specified powdered peanut butter. It has a much lower fat content; you mix it with water to get the consistency you want, and the flavor is pretty good

I like cucumbers. You can sprinkle some herb flavorings on them if you don't want salt or eat them just plain. You can slice those ahead. I occasionally like to eat black eyed peas from the can. Bring a can opener and a spoon. I make my own apple sauce fruit leathers from apples with no additions. I cut up a variety of apples and cook them down into applesauce on low heat. I don't add water. Mash them when they are cooked. Dehydrate.

You could try pouches of tuna. I'm not sure if that fits your requirements.

For me:: unsalted/lightly salted almonds, apples, protein bars, bottled water, beef jerky.

The best thing for long road trips are salty dry snacks and no sugar. Because you need salt for electrolytes and long endurance. Avoid sugar because it cause you to get hungry soon. Don't drink too much water because the more you drink the more you need to use the restroom. I would say the best road trip snacks are salted nuts, beef jerkies, maybe packaged dried salted kale or seaweed kelp. They are loaded with iodine, minerals, and fiber. Fiber is what helps you stay fully longer. Don't eat candy bars or fruits, they will make you constantly hungry.
