Any tips on grilling perfectly cooked lamb?
I cooked lamb on Weber charcoal grill but it became "rubbery " ,maybe because I put it on the grill when it was too hot rather than when the temp was lower than the initial high ?
Doneness was the problem. Never cook lamb "well done". Medium rare is best, but if that is too rare, take off the grill when medium well and let it continue coming up while resting.
Lamb is wonderful but always sear it in a skillet first.
Best is a cast iron (for any meat) but a regular pan will do.
Lamb also does not lend well to being well done.
Fast and hot. Or as professionals call it Black and Blue.
