Real maple syrup. I don't care for the maple-flavored stuff. Read the ingredients on the fake stuff.......artificially flavoring, etc. I always prefer real over imitation.
I have posted my pancake video on here before and won't put it up again, but an important part of good pancakes is to pour the batter into a pool of butter in a pan hot enough that it is just turning brown. Then a big dollop on the pancake when done. Honey or maple syrup, sausage grease and butter make the pancake perfect.
I also prefer pancakes (or waffles) in the evening, rather than for breakfast.
Yes, I agree as well about the butter's importance. Butter is essential.
