I love sauteed cabbage with roasted onions and crispy chunks of bacon.
Other favorites:
- roasted zucchini with green onions, feta cheese, and basil
- quickly pan fried spinach with garlic and lemon
- green beans casserole

I love spinach, as well as kale and other greens in soup. There's a picture of sauteed broccolini and lemon on the cover of the Sur La Table catalog that just came in the mail ... it looks SO good. I'm making mahi mahi and rice for dinner, and I think I might have to pick up some broccolini too.

Broccoli, zucchini. My husband stuffs zucchini with god knows what, but it tastes great. I don't ask questions.

Want a real easy recipe, healthy and combines two sides in one, I serve it with a piece of broiled fish.

Buy two bunches of mustard greens, disgard stems, quickly boil, maybe 30 seconds. Drain, rough chop, put aside.

Get 3 or four Yukon gold potatoes, peel, chop in 5-6 pieces, boil till almost soft, drain...semi mash them but leave chunks.

In frying pan very lightly coat with olive oil, add some chopped garlic and a few red pepper flakes. Sautee garlic DO NOT BURN! Add potatoes, lower heat, cook 8 minutes, flip, cook another 8 minutes, then add in greens, cook another 3-4 minutes, add salt pepper.

Superb, and FYI, mustard greens are one of the top veggies you can eat. mustard greens, kale, collards and turnip greens all have an ANDI score of 1000, the highest possible. Spinach and bok choy are also some of my favorites.

I've been sauteing a lot of kale lately, along with wilted spinach.
The cabbage out in the garden is just about ready, cant wait!

i don't think of green beans or zucchini as being winter, so I would have to say, Bok Choy (our new addiction) and broccoli.
