I have so many tomatoes and cucumbers from my dads garden what can i do with them all. Ive made salsa, cucumbers and onions. Ideas please!

Make spaghetti sauce using the tomatoes and freeze it -keeps almost forever.

Fried tomatoes! The ripe red ones, although not as "famous" are more yummy, IMO. Just flour slices & fry them in oil & let them get a little brown, crispy. Trust me, they are delicious! I got one poor lady so addicted, she wanted them for breakfast! Oh, and you can't eat just 20

And I've read putting Cucs over your eyes helps the dark circles.

Can the tomatoes whole for stewed tomatoes later which can be used in all kinds of things. You can even freeze them as well once peeled.

TOMATOES
1) BLT sandwiches
2) cut a tomato from in eighths from the top to almost through the bottom then make up a tuna salad mixture and put it into the center of the tomato. Eat tuna and pieces of tomato.
3) make tuna mixture, spread on single slice of bread, put sliced tomato to cover tuna, sprinkle grated cheese and place under broiler until cheese bubbles.
CUCUMBERS
1) fried cucumbers. Wash and slice, dip in egg/milk mixture, coat in corn meal and fry in skillet
2) Stuffed Cucumbers
* 2 cucumbers
* 1/2 lb ground beef or Italian sausage
* 1/2 cup bread crumbs
* 1 or 2 cloves garlic, crushed
* 1 egg
* 1 can or jar of your favorite spaghetti sauce
* 4 slices of Provolone or Swiss cheese (or use enough crumbled blue cheese to cover)

Peel cucumbers and cut in half, lengthwise. Scrape away seeds with a spoon. Mix meat, bread crumbs, garlic and egg. Fill cucumber "boats" with this mixture. Place in microwave dish and pour tomato sauce over the stuffed cucumbers. Cover each with a slice of cheese. (Select cheese according to desired degree of tangyness. If sauce already contains Parmesan cheese you may wish to omit the cheese.)

Cover dish, and microwave on 80% power for five minutes. Turn dish 1/2 turn and repeat. Test cucumbers with a fork for doneness. If they appear too hard, cook another 5 minutes on 80%.
3) Fish Tacos with Cucumber Salsa
Fish Tacos:

* 1 egg
* 1/4 cup milk
* 1/4 cup water
* 1/4 cup flour
* 1/2 teaspoon salt
* 1/2 teaspoon baking powder
* 1/4 teaspoon dry mustard
* 2 pounds white fish fillets
* Oil for deep frying
* 24 corn tortillas, the fresher the better
* Lime wedges

Cucumber Salsa:

* 1 cup English cucumber, peeled and diced
* 1/2 cup red onion, diced
* 1/2 cup Roma tomatoes, diced (use your dad's tomatoes)
* 1 tablespoon fresh jalapeno chile, minced
* 1/4 cupred wine vinegar
* 1 tablespoon fresh cilantro leaves, chopped
* Salt and pepper

Beat the egg with milk and water. Add flour, salt, baking powder and mustard and beat until smooth. Cut fish into pieces about 2-1/2 to 3 inches long and 1 inch wide. Dip fish in batter until well-coated. Fry in deep oil heated to 375 degrees until golden brown and crisp.

Heat tortillas one at a time on griddle (or use the triple-stack flip method if you know how) until hot and soft, or else wrap in foil and heat in a 350 degree oven while frying fish.

Combine all the salsa ingredients together, add salt and pepper to taste.

Place each piece of fish on a hot tortilla. Top with cucumber salsa, and serve with lime.

My favorite way to eat cucumbers is in a Greek salad.
Cucumbers are also used for Greek Tzatziki sauce, eaten with lamb.
Last weekend I slow roasted a bunch of tomatoes and plan to do some more.

One of my favourite French ones for tomatoes "Tomates farcies" ( stuffed tomatoes), I prefer beef but some people love it with lamb.


INGREDIENTS:
8 large tomatoes
4 tablespoons oil
1 large onion, chopped
4 oz minced beef or lamb
½ teaspoon cumin
¼ teaspoon paprika
1 teaspoon tomato puree
1 tablespoon chopped parsley
1 tablespoon thyme
4 oz cooked long grain rice or couscous
2 oz sultanas
½ teaspoon sugar
to taste seasoning

METHOD:

Prepare the tomatoes by slicing off the top, and scooping out the flesh (which you should keep) and discard the pips.
Heat two tablespoons of the oil, and fry the beef/lamb, followed by the chopped onion. Add the spices, tomato purée, rice or couscous, the tomato pulp and sugar, the sultanas and the parsley, and season well.
Fill the tomatoes with the mixture, and replace the lids. Pour a little oil over each, and cook for 15 minutes in a moderate oven (Gas Mark 5/190°C/375°F).

You could also use this stuffing mixture for peppers, in which case you will need to cut the tops off and keep them back, and the remove all the insides. Cook them for 20 to 30 minutes, depending on size.




Tomato and tapenade tart , also really yummy, serve with a crisp green salad






Ingredients :
1 pot black olive tapenade
5 or 6 tomatoes
1 savoury pastry case
Basil sauce (see below)
Grated cheese

Basil sauce:
2 tablespoons olive oil
10 leaves fresh basil
Grated Parmesan 1 cup

Recipe :
Preheat oven to 180°C (350°F).
Prepare pastry case, then spread tapenade over bottom of tart.
Wash and de-seed tomatoes, then slice.
Arrange in tart.
Using a teaspoon, spread each tomato with basil sauce.
Sprinkle with grated cheese, then cook in oven for 35 minutes.
Serve with a green salad.


Basil sauce:
Chop basil, then mix all ingredients together and blend in a food processor.


Advice :
You can also use green olive tapenade, or add anchovies instead of basil sauce.


For cucumbers I love the Russian Cucumber salad, lovely and refreshing.


Ingredients:
1 large cucumber
1 tbsp lemon juice
4 tbsp cream
1 tsp dill, roughly chopped
salt and pepper

Procedures:
1 Wash and peel cucumber. Cut into very thin slices.
2 Mix together lemon juice, cream, a dash of salt and pepper (according to taste).
3 Add cucumber slices and toss in cream sauce.
4 Arrange in a serving plate and garnish with chopped dill.


Iced Cucumber soup, delicious on a hot day :

Ingredients
½ cucumber
150g/5½oz Greek yoghurt
1 tbsp chopped fresh mint
small handful crushed ice
salt and freshly ground black pepper
mint leaf, to garnish



Method
1. Place the cucumber, yoghurt, mint and ice into a food processor and blend together. Season, to taste, with salt and freshly ground black pepper.
2. To serve, pour into a bowl and garnish with a mint leaf




Cucumber raita, delicious with Poppadoms, Chicken tikka/tandoori etc...
Ingredients
½ cucumber, chopped
½ onion, peeled and chopped
handful of mint leaves, chopped
1 small tub Greek-style yoghurt
salt and freshly ground black pepper
squeeze of lemon juice



Method
1. Place the cucumber, onion and mint leaves into a bowl. Add the Greek-style yoghurt, seasoning and lemon juice and mix together until combined.
2. Spoon into a serving dish and serve at once

My mom's recipe (mom's always have the best recipes )

Slice the cucumbers in fourths,

Cut tomatoes in fourths.

Throw in italian dressing.

Marrinate.

Eat the enjoy.

The next day it's even better!
