The only problem we have with leaving out butter....is the little cat tongue grooves in it....

Butter that I cook with is kept in the refrigerator. However, I keep butter that's to be used at the table in a covered butter dish on the counter. When it gets very hot in the summertime, I'll put the butter dish in the refrigerator between meals so that the butter doesn't get too soft and mushy. It's never gone bad.

I don't have the answer, but in our house it is left out during the winter, spring and fall: refrigerated in the summer. I can't stand when it is so hard you have to zap it to butter anything. I will say, this past week, in Vegas we had the olive oil butter, it is spreadable and can be kept in the fridge..it really had a lot of flavor..

Here is an embarrassing question as well. How does it work? I read that it uses water to seal out the air, but I dont see where it holds water. Judging by the pics it looks like the butter is stored upside down, which I doubt. Also, how do you get a stick of butter into the misshaped jar.

I also use one of these and they are really good.
The water goes in the jar part, the thing on the left side of the picture. The right side of the picture is the lid/butter storage. Yes, the butter is stored upside down. To get it in the keeper, you just let it get soft first, then smush it into the top with a spoon. Just make sure you really get it smushed in there, or the butter will fall out into the water. I had that happen this week.
