Hello,
I have a little dilemma and seem to be getting different opinions on this, so I thought I would ask here for your advice. I have a commercial espresso machine that I plan to use in a small business which is located outside the city, in the farm land. The water there is pretty bad, as it smells funny and is definitely not potable. Some people tell me that if I were to use a filter (and I do have a commercial grade filter) to filter the water, in addition to the water being heated/boiled inside the machine, the water will be just fine for consumption. Others tell me that I should not use this water at all, other than washing hands/dishes, and that I should use bottled water (the 5 gallon alhambra for ex.) to make the coffee. I am leaning towards using bottled water, just to be on the safe side, but I was wondering who's right and who's wrong and whether or not filtering this water will make it safe for consumption.

Depends on the filter, I'd imagine. Can look up the specs for what contaminants it removes. Depending on the micron size of the particles inside, the water might still stink. Only way is to try. I'd be willing to bet that a commercial grade filtering system would be just as good as bottled, though. And probably a lot cheaper in the long run.

For the type/grade of water your looking for you would probably need a multistage ion exchange filtration system. Again try a taste test with the different types of water. Who knows you might just start a new trend. Egg flavored morning esspresso.

I would check with the Health Inspector for the area to see what is acceptable for a commercial business.
