My all-time favorite is gruyere. Just cut it into little cubes and let it come to room temperature. It gets kind of a sweaty look to it. Feta is probably my second choice. I love it on Mediterranean pizza or in a Greek pasta salad.

Well I live in Wisconsin so it is a crime not to like cheese here! My favorites would be Bleu, Provolone, Havarti Pepper Jack, Colby, and all the local blended varieties.

What a friend we have in cheeses.

There are few cheeses I don't like, mostly the really stinky French varieties. My favorites, in no particular order, include: Fromage D'Affinois, Old Amsterdam, Grana Padano, Provolone, Torta del Casar, Purple Haze (from Northern California, a goat milk cheese scented with lavender and fennel pollen -ambrosial!) Parano, Beemster, Asiago, Aged Gorgonzola (with sweet wine like Sauternes)....

Not a huge fan of cheese overall, I'll eat it if it does not get salty after it is melted otherwise I won't eat it.

I love fondue. I also have a raclette set....which is very fun.
Swissmar KF-77041 Gourmet 8-Person Raclette Grill, Black: Amazon.com: Home & Kitchen

My kids enjoy eating this way...we often did this on weekend nights. And Sunday afternoons. I used mine at least two or three times a week...great for teens, and their friends. Sleep over parties...

I'm eating a cheese plate right now that has some kind of Italian truffle cheese, some manchego, and a gouda with olive tapenade.

I like gourmet and imported cheese, pedestrian cheese, hard cheese, soft cheese...the only thing I don't like is pasteurized processed cheese food, hah. When I was a kid, I didn't like swiss or blue or gorgonzola, and I love all three now.
