I am interested in what other people serve their family, broken down by beef, pork, chicken, fish and region you live in. I'll go first. I'm in North Carolina.

Beef
slow cooker roast
tacos
spaghetti with homemade meatballs, but jar sauce
meat loaf
swiss steak

Pork
pork tenderloin
smothered pork chops
polish sausage with potatoes
breakfast for supper with bacon or sausage

Chicken
stir fry
cordon blue
homemade chicken soup
chicken and broccoli casserole
chicken salad

Fish
fish sticks or fillets-easiest quick meal I can fix- actually I've never cooked fresh fish except salmon
tuna casserole

I know we all do special dishes every now and then but I'm really wanting to know what your I-could-do-this-blindfolded dishes are. I am learning so much from this forum. Many thanks.

oh yummy- I want to know about your deviled crab casserole and crab cakes. I love them both but only fix them on special occasions. Do you buy fresh or frozen shrimp?
I forgot chicken pot pie and BBQ prk on my list.

Don't know if I can come up with 14-15 but I do have several favorites I make often. I live alone, so I make big batches, give away some to starving student relatives and freeze the rest.

Now that my husband cannot eat solid foods I only cook fish on days when Son has leftovers to eat and I would never cook shrimp and grits just for me. Son does not like fish or most pork dishes and those are mostly cooked when hubby can eat food. It is so complicated. Some of the dishes listed are from when hubby could eat solid food. I, on the other hand, will eat almost anything.

My gosh, I *wish* that I had 14-15 meals in our rotation. My husband, though, doesn't eat red meat, so beef and pork (I know, I know... it's the other white meat... but not to him) are out. We eat chicken and fish and seafood (and plenty of all three), but pasta plays a large part in our rotation. That is, until I make too much of it and my husband insists that we're going to get scurvy.

I hate having the same things over and over again so I try to vary. I also hate to eat lots of lower fat but necessary due to required diet. I plan meals at least one week ahead of time.
