Tonight it was fried chicken, green beans and bread with iced tea! I usually eat vegan but this was a special occasion and I let myself off the hook for the night since i didn't want leftovers of veg pizza...

Tomorrow its Qninoa, tofu, vegetables and dried cranberries with sunflower seeds~

I'm going to do a "clean out the veggie bin" dinner tonight and stir-fry everythng left with some chicken, pasta, ginger, garlic, soy sauce & sesame oil - sort of like a homemade version of lo mein.

Chicken pot pie and mixed salad.

I always cook up a bunch of chicken and veggies for pot pies and freeze them in portions so it is easy to prepare since all I have to mess with is the crust and those are easy to keep on hand in the fridge. Plus my family loves pot pies.
