What we have tonight will depend totally on the weather outside and mother nature. We are supposed to go to church for lenton services, which includes a light dinner (usually pretty crappy) and then the service.We have to go cause we are working the welcome desk tonight, but if the snow gets her in the next few hours they will most likely cancel the service, as we live in a very hilly area with a lot of seniors and even our chruch parking lot is a bit hilly. If this happens, God only knows what I will fix. I am thinking of Salmon, salad and veggies, but if I want that I should take the Salmon out now. of course I can always have it tomorrow night.

We plan on doing a re-play of the Chili Colorado we made yesterday but this time we'll cook a bunch of small round dumplings in the sauce. ~♥~

Chile Colorado made from local beef T-Bone Steak with dumplings. Mexican rice will be the default side dish and the garnish will be a pickled serrano pepper, a few hot carrot slices and a sprig or two of cilantro.

Of course there will be the ubiquitous Tapatío and some oregano Mexicano entero on the table.

Since it's snowing here in Tucson right now ... I just put up a pot of chicken soup, so tonight will be chicken noodle soup and a chicken and rice casserole.
