Angel hair pasta tossed with butter & garlic, a Caesar salad and breadsticks. Lemonade to drink. Just didn't feel much like cooking.

Tuesday night 2-28 I am taking the main woman in my life (my mother) out to celebrate her 55th birthday to the Cheesecake Factory (her favorite restaurant) where I will have one of their combination platters
... the Chicken Madeira and Steak Dianne with a nice Cabernet.
Sautéed chicken breast topped with fresh asparagus & melted mozzarella cheese and fresh mushroom Madeira Sauce. Comes with Certified Angus Beef Steak medallions covered with black peppercorns & rich mushroom wine sauce, and mashed potatoes.

Tonight is my cheat and eat dinner. It is very hard but tasty.

First you open a package of Ore-ida fries and pour a couple handfuls on a baking sheet. They you open the box of Cod Fellits and place about 4 to 6 on the same baking sheet. You place in a preheated 450degree oven for 15 go 23 minutes. While the fish and chips are baking you make a spinach/avocado salad, using baby spinach, a mid sized diced avocado, crainsns, crumbled blue cheese and a dressing of fresh lemon juice, lemon zest and a little olive oil. Don't forget to season the potatoes with a little salt, pepper and maybe a dash of chile powder. You can make home made tarter sause or just use lemon, This is my fancy dinner, takes about 25 minutes to assemble including cooking time. For those who don't know how to eat pure foods you can also put the Ketcup on the table. This my friends is my special, hard to make dinner. Well I guess it would be hard for a 1st grader. Regardless it does taste yummy!!
