a quick soup, started with canned cream of tomato, added in the leftover chicken & black bean enchilada filling I had, a few corn tortilla strips I cut up, and finished it with a big blob of fresh ricotta stirred in at the very end. Pretty tasty -- everyone had seconds and there's nothing left.
