Yesterday, I got home late from the office (7:30), but I made shrimp enchiladas, guacamole, refried beans, and salsa. You all know how much work it is shelling and chopping the shrimp, chopping the veggies and shredding the cheese for these simple dishes and by the time everything was ready - husband had already eaten a large salad and wasn't in the mood for it, daughter had a cold and claimed as she couldn't taste anything so she wasn't hungry. I could just as well have had bacon, grits and scrambled eggs by myself! I consoled myself with a Long Island Ice Tea and ate alone (but ticked off).
Needless to say, they are going to have leftovers tonight!
Kind of ate in parts. I had chicken soup with croutons and coleslaw around 4:30 and then went to a walking tour. That was fun! I got a very tiny chocolate cream filled pastry after we were through. Now I am having a small cup of chili.
Pasta Alfredo with broccoli and meatballs, along with a side of red seedless grapes.
