Kale isn't bitter! Wash well, remove all stems and cook with a bit of bacon fat or bacon itself....and some salt. Cook till tender...delicious! We eat kale ALL the time.
Yes...it will stink up the kitchen...it's a member of the cabbage family, after all, but it's so good! Love the texture!
I don't think kale is bitter at all, there are greens that are a lot more bitter. To me, it's like eating a more mild cabbage, flavor-wise, if not texture-wise.
Strong, pungent veggies and greens aren't offputting to me, though. I love broccoli, cauliflower, cabbage, kale, spinach, mustard greens, collard greens, turnip greens. Yum.
I tried making kale chips once. Didn't turn out to well. They seemed soggy even after I baked them longer than recommended some were okay. Stored the leftover dried pieces and they became soft.
Kale is a staple in healthy juicing. Also, in survival style shows, like the one about the family in Alaska who live off the land, kale is their winter staple. They literally rely on it for its nutrient value over the winter months.

I make a smoothie out of kale, apple and a bite of lemon juice and it is really good giving it a sort of green apple flavor! I vary the amount of kale (usually about 4 or 5 leaves with the middle stem removed), an apple or two and maybe a tablespoon of lemon and then I add water until it is a consistency that I can tolerate because too thick is just .
I make green smoothies a few mornings each week, with kale as one of the ingredients, I drink it fast and follow it with water. They don't taste that bad, I wouldn't want to sip it slowly though.
