A Neighbour of mine received a very large presentation pack of extremely expensive anchovies ( preserved in fabulous extra virgin olive oil not the nasty salty things you get on cheap pizza) by mistake from her online grocer ( she contacted them and they told her to keep it of course) and has bestowed it upon me as she loathes them.

I adore anchovies and these really are top drawer but it is a BIG pack ( probably a pound and a half maybe more ) and I have no idea what to do with them. I don't make my own pizza ( and hardly ever have pizza anyway) and there is so much you can put in salad Nicoise ( which I made today).

Any recipes you can think of requiring large amounts of anchovies ? I am not sure how much anchovy paste I would use and I am starting to think I shall have to end up throwing them away which would be such a shame.

Or maybe I should become a really good friend to all the neighbourhood Kitties and entice them with my fishy wiles....

Any help gratefully received.

Ohhh, how I love anchovies.

Put this into Google: what to make with anchovies

You'll see a TON of hits. Hopefully you can get some good (and salty ) ideas!

Are you up for hosting a dinner party? You could include anchovies in layers - an appetizer, salad dressing, maybe a pasta sauce. Besides that I can't think of recipes that call for a ton of anchovies. Enjoy whatever you end up doing with them - let us know!

First, if need be you can freeze the anchovies. I wouldn't give my cat something so salty.

Now, here'ss a pleasnt recipe. Scramble some eggs. Make some buttered toast. Lay the anchovies across the toast, then pile the scrambled eggs onto that.

Thanks. I was not really serious about feeding them to cats though I must admit the anchovies have no salty taste whatsoever and are completely different from the often shrivelled tinned ones you can find. I assumed they were first cured in Salt but it certainly has not left a salty taste if so. They are very plump and quite large and really lovely, more like fresh fish than anchovies as more commonly used on pizzas etc... I like the idea of freezing them though, that sounds like a good solution.

I'll bet they won't go bad as quickly as you think they will. Check the expiration date.

Also, definitely don't give them to a cat (I know you said you're kidding, but someone reading this might think it's a grand idea). Anchovies have very sharp thin bones that can lodge into a cat's throat and choke them to death. Even the fillets.

Since they're not brined, you could brine them. Then you can use them for all the things people normally use them for, such as caesar dressing, anchovy sauce for angel hair pasta, you could buy pizza without any toppings, and ADD some to it (no extra charge if you supply your own toppings, don't forget!). You can also eat them just exactly as they are, on a plate. And of course you can toss a few in a salad. It doesn't have to be any special kind of salad; brined anchovies taste great on just plain lettuce and tomato.

You can also make finger sandwiches with cream cheese and anchovies on toast tips, as an appetizer when serving dinner for guests, or just as a snack for yourself.
