Did your mom have set meal nights (rg. tuesday is pasta, wednesday is fish, etc.)? I'm sure we all had our favorite meal, but what was the most common meal you'd get?

My mom did a lot of variety, but also a lot of pasta. Not the same pasta over and over, but I'd say we had pasta probably at least 3 times a week. Everything from ravioli to stuffed shells were pretty common.

So what was your mom's go-to dish?

Lemon chicken. It's an Italian version with fresh lemon juice, tons of oregano, and sugar with bone in skin on chicken breasts, thighs, and drumsticks. It's delicious and I still make it.

The only set meal I recall was we had hamburgers on Saturday night. The only pasta dish we ate was a "goulash" made with elbow macaroni, hamburger, tomatoes and corn. And we didn't really eat casseroles besides scalloped potatoes and ham. The dishes I remember most were meatloaf, pinto beans/cornbread/fried potatoes/spinach, and pork chops.

every sunday was pasta meatballs, sausage and red gravy. Other nights of the week it varied.

My mom worked so weekdays were usually up to me once I was age 8 or so. We had lots of pasta dishes, too. I would make things like pork chops and rice, hamburgers, baked chicken, hamburger stroganoff and lots of casseroles. Mom cooked on the weekends so Saturdays were almost always a homemade soup or chili and some rolls or if it was hot something like taco salad. Sundays were usually a roast with potatoes or rice and veggies or lasagna, salad, and garlic bread. Very occasionally my Dad would cook up a Japanese meal he learned how to make when he was stationed in Japan. Any day of the week friends were welcome to come over and eat with us so we made tons of food. There were seven of us in the family and whoever else showed up.

One Saturday when I was 15 or so Mom said she didn't feel well and would I mind cooking dinner. She told me I would find the meat ingredient wrapped up in butcher paper in the fridge. Around 4PM we were all sitting around the dining table (where we always hung out) and I went into the kitchen to start dinner. I unwrapped the package and screamed bloody murder!!! Mom had bought a whole octopus just as a joke to freak me out. Well, it certainly worked. I flung it away from me and it dropped on the floor and that freaked me out even more. Of course everyone was laughing hysterically and they all ran in the kitchen to gawk at me and the octopus on the floor.

I think we ended up ordering pizza that night.

We didnt have "meal nights" but three things stand out from growing up. (most likely because they were all cheap) Spaghetti with Ragu sauce. I guess that was the number 1 meal. Italian family but mom was a nurse working long hours so it was quick and easy. Also pork chops and Kraft mac&cheese and lastly baked chicken legs and scalloped potatoes.
