I really do not think it is a big deal one way or the other. There's way too much pizza in the world anyway. Pizza has taken over America! Every street corner has a Pizza place. Pizza, pizza everywhere!

"Piece of pizza"?
We used to walk into the pizzeria and say "I'll have a slice"...it was never a piece.
You had no choice but to fold...and it wasn't because the pizza was soggy. It was because it was Northern Jersey/NY style pizza and it was the way we were taught to eat it.
Cheddar cheese on pizza?
Never heard of such a thing in the NYC area.
If you walk into the "Original Rays" on 11th St and 6th Ave in The City you would never be able to hold a slice of their pizza without folding it...it is that large of a slice.
I've been to Chicago and I do not see what the fascination with Deep Dish is.
I am from Texas and I fold my NY Pizza! I recently visited a NY style pizzeria in Denver Co, and the owner actually came out of the back to meet me when he saw me fold my slice.
Apparently the proper pizza ettiqute is a lost art outside of the true believers.
As to the cheddar problem. I have never seen cheddar on a store bought pizza, but my mother, pleasant little Welsh-Dutch woman who had never seen a NY pizza before, made hers from a recipe she found in a magazine long since discarded and uses a mix of 2 parts Mozzarella and 1 part Cheddar. It is a very good pizza, but will never make the menu of a pizza parlor. Many in my family have expressed cravings for this pizza and have had her make and freeze them for future consumption.
Definitely a NY, NJ thing. Only place with those giant, thin chewy crusted pizzas too. Italian "pizzas" (in Italy it is not the same thing) is smaller with a very crispy crust - not possible to fold.

Really brought back memories. (Which Denver pizzeria?)
I came of age in both Levittown, Long Island, NY as well as Denver, Colorado.
(left NY at age 14 to move to CO.)
I really kind of forgot all about this, and nobody in Denver ever raised eyebrows at me, but folding was definitely done in NY and I certainly continued the practice in Denver--and on to today.
As for different cheeses, I've seen all sorts of cheese used, but have to admit that cheddar might not have been one of them.
One of my favorite pizzas is 3 white cheeses and pesto, though.
Do people outside the NY-NJ-PA area really not fold their pizza?
Here, we pick up a slice of pizza, fold it and then bite it. I always assumed that's how everyone eats pizza b/c that's how I was taught as a baby.
The other day this woman told me that no one eats it that way outside this area. I have been other places, but wasn't exactly staring at people dining lol.
If you don't fold it, how do you eat it? I don't get it.
