I get pre-cut butternut squash cubes from Trader Joes and roast them with a little oil, salt and pepper until they're caramelized. It's super easy and delicious. You can also use a mix of root veggies like parsnips, rutabaga and carrots.
I confess I do this as well, it's just so much easier, although I know I'm paying extra for the convienence. I love to make gratins with these, and add them to various pasta dishes and soups.
I usually cook them Japanese style, and the Japanese don't peel them. They'd fall apart then.
But sometimes I peel them to make pumpkin pie. If I do that, I peel after cooking them. It's not hard after they're cooked.
I love both squash but they're so darn hard to peel without inflicting some injury to myself. Usually for soup I would stick it in the oven for an hour or so then spoon it out for my puree. But what if I want them in cubes? Yesterday I was trying to make pumpkin fries and it took me at least 20 minutes to work on half of a small pie pumpkin. There has got to be a easier way.
We love butternut squash, but I get the package of chunks. Before they were available, I used to ask the Wegmans produce clerk to slice the butternut squash lengthwise for me, and that made it easier to cut and peel at home.
I stab the butternut squash w/an ice pick abt 10 times all over. Then put it in the microwave for maybe 7-10 mins. It softens up the bsquash so you can cut it in 1/2 and then peel it. It works!
I use the potatoe peeler and then I cut the ends off and scoop out the seeds and crap and then I put it in a pan with some water and bake it and it comes out so nice and tasty

I buy the already cubed butternut squash as for pumpkin never peeled one.
