To add a note of reality, you might rarely get food poisoning from doing that, but what odds are acceptable to you? 1 in a 100? 1 in a 1,000? As the saying goes, "When in doubt, throw it out."
In a commercial kitchen the basic rules are these: meat and other prepared proteins must be kept below 40F or above 140 F, and spend no more than 2 hours at any in between temperatures... ie. room temperature. You might choose to be a little more relaxed than that at home, but by how much? It all depends on how much you're willing to roll the dice.
Government studies show that 1 out of every 4 people in the US suffers food poisoning each year. One of my friends got food poisoning yesterday, apparently from food that had been sitting out at a party, and today she's still sick as dog. I sure am glad I didn't make that food!
Glad it turned out well! I would have still eaten it after 2 1/2 hours. One time I did that and it was sitting out for 5 or 6 hours. I definitely threw it out, but I was so bummed!
I did this last week. Came home from work at 1 and put the chicken and all the ingredients in the crock pot. Got home at 5 and wondered why my house didn't have that yummy dinner smell. I forgot the plug the dern thing in. Kind of freaked out a bit because it was raw chicken, but I ended up cooking it, and ate it and I haven't been sick.
No, I would not fool around with chicken--that would have been thrown out. I won't even bag raw chicken with produce or other dairy products, it can cross-contaminate much easier then you think. kelsie
