I love tapioca especially with a dab of jam in the middle while it's still warm. (Hubby won't eat it,
calls it frog spawn.)
And the real chocolate pudding. After reading what's on the box--artificial red color and artificial
everything else, I made it the other day from scratch. Yum.
In a saucepan, stir together sugar, cocoa, cornstarch and salt. Place over medium heat, and stir in milk. Bring to a boil, and cook, stirring constantly, until mixture thickens enough to coat the back of a metal spoon. Remove from heat, and stir in margarine and vanilla. Let cool briefly, and serve warm, or chill in refrigerator until serving. ------I have a milk allergy so I used soy milk and it still came out great.
One thing I noticed about desserts in the past is that they used to be healthier. That's my impression anyway. Desserts used to be fruit or a pie containing fruit and you had things like apple crisp or blueberry buckle. I'm thinking of the more distant past.
Now it's ice cream or things made from chocolate chips or other candy or cake. Those things used to be rare treats, not regular desserts.

I had forgotten about tapioca, that is one thing mom did make. As for desserts being healthier, I don't think so, I would say the opposite: puddings were made with extra rich milk, most really good cooks used more butter and more real whipping cream in baking. If they didn't use butter, they used old fashion lard. Most families had dessert everynight, we didn't, but our friends all did, so did my husband. So no, I do not think desserts were healthier...
Junket. My Gram used to make it at least once a week. I had to eat it really fast so it wouldn't separate. I don't miss it.
But I do miss her pie crust. It was killer. Of course, she used lard. And her cooked chocolate frosting. I have never been able to duplicate it.
