I just bought some extremely expensive heirloom tomatoes which I have never tried before. I'm thinking about baking them with mozzarella and oregano. Any suggestions how to bake them or what to do with them?
I would do either raw in a caprese salad (with buffalo mozzarella, fresh basil, olive oil, and seasoned with salt), or halved and -roasted- with olive oil and pignoli nuts.

Why ask for advice and then ignore everyone just to do what you originally planned to do?

the insalata Caprese sounds like a good idea especially with the mozzarella di bufala
They taste better and cost a whole lot less when you grow them yourself. Most food does!
Best way to eat them? Right off the vine, while they are still warm from being in the sun.
I think my favorite two heirloom varieties (in Oregon, where we are currently) are the Brandywine and the Hillbilly... both delicious.
