Mental conditioning

It's a known fact that food tastes better when you're hungry. Starve yourself until dinnertime, then cook yourself a big ol plate of vegetables. It'll taste like the best vegetables you've ever had in your life. Repeat this process until your mind has been tricked into thinking vegetables taste good.

Seriously, I am trying to eat better but some things are just SO difficult to keep from spitting out, broccoli being high on that list. I had cooked a bone-in chicken breast the other night (cooked two, actually, one was for dinner one night, the other for last night) and to my dismay, the only veggie I had left in the freezer was a broccoli/carrot/water chestnut combo that I'd bought thinking I'd do a stir-fry. I just cooked some of the veggies, and added about half a tablespoon of butter and some salt and pepper. It was enough to make it palatable, and I ate it with the chicken. Yes, it added some 50 calories, but at least it became possible to chew that broccoli and get it down without gagging.

I mix vinegar, garlic, and dijon mustard over steamed broccoli. So good.

The best advice I can give you is don't cook them down to mush. Overcooking takes all the crunch out of the vegetables and robs them of all flavor. Grilling, steam-frying or even baking them is best to bring the flavors out, if you must cook them at all. Many vegetables people assume they have to cook -- like sweetcorn and string beans -- are orgasmic when eaten raw.

Oh, and if you're cooking cabbage, ALWAYS add a stick of celery. It prevents that cabbagey odor from developing.

Hollandaise sauce is just about the best thing that was ever invented. It makes green beens, asparagus, and a myriad of other veggies palatable.

I really don't like sauces (cheese-based, butter-based, etc) on my veggies. I like my veggies sautéed or blanched because I actually want to taste the veggies. I've created a seasoned salt that I love to sprinkle on my veggies to enhance, not hide, the flavor. You should try to create a seasoned salt that appeals to you and your family and use that to enhance the flavor of your foods - you might be surprised at how it "kicks-up" your veggies. BTW - your seasoned "salt" doesn't really even have to have salt in it.

Some of the herbs/spices you can add to your seasoned salt:
garlic powder
onion powder
smoked paprika
thyme
rosemary
curry powder
dry mustard
turmeric
sugar
