I would go with a Mexican/Korean fusion restaurant or a really good Oaxacan-style restaurant.

A nice mid-scale restaurant with a large char-grill featuring grass-fed beef, free-range chicken, wild game and fresh seafood with a "California wine country" influence.

I would love to be able to get quick food that is also real, healthy food. Organic salads that aren't doused in preservatives, sandwiches made with real bread and real meats, soups made with real ingredients, Mexican food not cooked in lard, Chinese food not laden with chemicals. I know they have these types of places around, especially in the Pacific NW area. I can't and won't eat at most of the fast food places anymore because their food is such crappy non-food and it gives me digestive issues.

and by mid-scale, I am assuming you mean mid-priced: offering grass fed beef, free range chicken and good California wine fresh seafood, and wild game, at middle of the road prices isn't going to make you much money. It might be fun but you would soon go bankrupt. If you can find a way to do this, let us all know. We will stand in life for seating.

I would open a combination Indian/Thai food with a buffet option of exotic foods. Live music after 8:00 PM, And a game room with old school video games and pinball with a bar area. Serving optional flaming cocktails. Buy 2 get the third free. Sat nights would be fire-breathers, Sword swallowers etc. Like a carnival/restaurant combo! Sundays would have Lucha libre wrestling in place of the games. Awesome!

Lee's Sandwiches. I could live on the Banh Mi (Vietnamese grilled pork sandwich on super fresh French baguette, pickled carrot and daikon, cilantro, jalapenos, and homemade mayo with soy sauce.)
