you give the roast to the butcher and he grinds it up free of charge, that way i can keep my portions small.
like a hamburger.

what makes it "Pikes Peak", is it a play on the word piker for the free service?

Nomadicus refered me to google....pikes peak roast is the "heel of the round" roast....a cut of beef. Just like until I went to california I never heard of Tri Tip Roast; and I think a Boston Butt and a Picnic Ham maybe regionalism.

We have always had Picnic Hams and Boston Butt port here in FL. Boston being the front shoulder and the picnic being the front leg. I just love a slice smoked picnic for seasoning fresh veggies such as lima beans and field peas. Even fresh green cabbage. Got to stop. Gaining weight by the syllable.
