Yellow rice with chicken. Veggies are still in the undecided sector. Iced tea will be a sure bet though as will the chocolate pudding. Must go easy on portion size of it all as Sunday is a big day for the annual homecoming at my late grandfathers church in north FL. Then 2 weeks later a family reunion with more genuine southern home cooking. Then Thanksgiving. Then, then, then, well I think the picture is painted here. I do so look forward to all the greens and field peas and lima beans and etc. Talk about a real feast, my cousins know how to put them on and I do like to sample.

Tonight will be a free dinner: Lime Margarita Chicken.

Sorry, no recipe folks. It's one of those frozen bag thingys that you stick into a skillet, cover and cook. It's supposed to be "white meat chicken, onions, corn, red bell peppers, black beans, in a spicy lime sauce with rice". (I'm not sure where the margarita part comes in.)

I never tried this before and would probably not buy it, but it was one of the freebees with my last grocery delivery. It's supposed to make 2 servings; since these sort of things usually consider midget sized portions and the bag doesn't seem big, I'll make some extra rice to put it over.

I don't have high expectations for it, so I'll make some refrigerator biscuits too. That way we could fill up on biscuits and rice if the chicken dish is a disaster.

Roasted chicken, with a leafy green salad (made with homemade balsamic vinaigrette) and pasta with cheese sauce.

I just learned risotto technique over the past few weeks, and I'm getting really good at it. Tonight I made one with roasted, pureed butternut squash; seasoned with cloves, ginger, cinnamon and a pinch of dark brown sugar. Side dish of little tiny cowpeas (can't remember what they were called, but they're even smaller than pinkeye cowpeas). I boiled them with some bacon drippings and topped them with crumbled bacon.

The risotto turned out better than I had even hoped.
