When I make chicken enchiladas I always poach the chicken until it is cooked through, then shred it and put it into a skillet with whatever other ingredients I want inside (spices, cheese, beans, onions, sauce, etc.). Combine it all together and simmer a bit and then put inside the tortillas and bake in the oven in a casserole dish

I'm going to an annual Christmas lunch which lasts all afternoon and always has mountains of yummy food. I'll need to scrounge up something good for DH, since I won't be hungry. A steak will make him happy.

Sounds great - now add rice and beautiful jade green steamed broccoli and you've made a teriyaki bowl!

Last night was hot Italian sausage, home made baked beans (they were so yummy, but I remember as I was putting them in the oven that I hadn't put any onion in them while they were cooking! Still good.), french bread.

Tonight, I think we're doing shrimp scampi with rice and some veggies. Knowing DH, it'll be green beans.

Chicken enchilada! Yeah, that's what I'll make for dinner! With green sauce, side of Mexican rice and nice salad with creamy cilantro dressing.

Well, it happened, I caught my husband's cold. So for supper I'm going to heat up some chicken broth.

I had an awful PT session yesterday. They had me on the parallel bars working on my walking and I got really dizzy, passed out and then threw up. My knee is still throbbing today.
