I found this on another thread and decided to try it with a roast tonight. All I can say was it was incredible. Great way to cook an eye of the round.


This might sound weird, but trust me, the result will be fabulous. Preheat the oven to 500 degrees. Take a 2 to 3 pound eye of round and rub it with your favorite dry steak rub, or just salt and pepper. Turn the oven down to 475. Put the roast in the oven in a roasting pan - no water, and do not cover. Roast for 7 minutes per pound (that's not a typo - 7 minutes). Turn the oven off, but DON"T OPEN THE OVEN DOOR FOR 2 1/2 HOURS. That's it. Slice across the grain. The roast will be perfectly done, juicy and tender.

We ended up with chicken parm tonight and peas.
My daughter really wanted me to make this tonight. Turned out good.

CRazyworld..........that sounds wonderful. I will have to try it. A lot of times I buy a london broil on a 2 or 1 sale.
I usually marinade it for 4 or 5 days in McCormick Marinade. But that sound easy and yummy

Evening all, haven't checked in since Friday and over 30 some pages. Ugh, don't have time to read through all that. Hope everyone had great dinners over the weekend.

Tonight for dinner, leftover lasagna out of the freezer, courtesy of hubby, salad and garlic bread. Yum.

I did get a good grilled cheese with the tomato soup for tonight. Wife has a very good dinner planned for tomorrow night but I'm not going to say yet. I really do not want to take a chance and jinx it.

Hey, VP...just be sure to marinate it well in your favorite flavor and broil or grill it. Then cut thin across the grain. It's wonderful. If you don't marinate and cut across, you'll have one tough steak. Oh, some people use it for pot roast, but I prefer other cuts for that.

I finally tested the method I read about awhile back...that pork is more tender at very low temperature (especially since they've ruined pork by making it so low in fat). So I convectioned a pork tenderloin (actually two) at 200 degrees for 2 1/2 hours. I rubbed a little olive oil on it first. Very good and tender. I mixed the pan juices with some red wine and some applesauce.
We had this with roasted potatoes and spaghetti squash with butter, salt and pepper. I swear, I could live on squash..it's so versatile.

My s-i-l makes a prime rib-350 for 1 hr, turn oven off, Do NOT open - an hr before eating put on at 350. I love cooking low and slow in the oven tho.

Noma waiting to hea what's dinner.

Mr. L has doc at 7:30-in a trade he's taking me to breakfast and I get to make him linguine and white clam sauce. Who's getting the better trade here??

I made my biscuts from scratch (first time for me). They turned out good but I would take any recipes or helpful hints anyone would like to share. Dinner was good so Hub said. be back...

Everyone's night is sounding good.

I varied tonights dinner slightly. I put the sea scallops away for another night and made thin spaghetti. Over that I put clams, mussels, & shrimp in a scampi sauce. We had fresh rosemary, thyme, garlic, crusty French bread& spring lettuce, with fresh mozzerella, roasted red peppers, feta stuffed olives, red onions, garlic in a red vinegar & eoo dressing. We are stuffed & happy.
Well time to do the dishes.
Have a wonderful Sunday night cd friends.

I thought I had posted but maybe not. I had grilled cheese with ham and tomato soup. Velveeta of course with jalapeno to warm it up. Finished the last of the pumpkin custard tonight too.
