hello elston!

Oh yeah..my favourite food is pizza and hamburgers!
Humburgers only meat; no souse, no cheese ...
In this case, hamburgers are great for diet!

During the day, I'm at canten at work and I have a different feeding.
At night, I usually maden meatloaf, hamburgers, omelette, pizza or steaks..
all easy annd quickly dishes.
It's necessary because I eat at 8.30-9.30 pm

At dinner, we don't eat pasta or other first dish.
My hubby hate fish , cheese...

I eat these food at lunch!

Elston I mix the mayo with sage, thyme, salt/pepper, onion powder and rub it all over the bird. Stuff the cavity with herbs,onion,celery. Tent and uncover last hour. No need to baste-skin is awesome, meat is juicy. A friend told me this 30 yrs ago and I've used it ever since.

I've decided what to do with the chicken tenders and will whip up some marinade to make mocha chicken and will have polenta on the side. We haven't had either one of those dishes in quite a while. Still haven't chosen the veggie yet, but it will be something out of the freezer.

That turkey sounds so interesting---I wonder if I can talk DH into trying that instead of his usual beer basting??!! I think he likes to drink the beer as much as baste the turkey! Ha!

Who wants to share a tried and true meatloaf recipe???

(Believe it or not, I've never made one and think it would be easy enough to do while I get the house sorted out!!)

This is how I make mine. It tastes great hot and then the next day I use the cold leftovers for sandwhiches.

Cottage Meat Loaf

3# ground beef
1 c. ketchup
2 c. flavored bread crumbs (I eyeball this. It may be a little more/less than 2 cups.)
1/2 c. chopped onions
2 Tbsp. prepared mustard
Apple sauce - enough to mix well but still hold together. (No measurement here. If I add too much, I just add more breadcrumbs.)
Garlic powder, salt, pepper to taste

Topping

1/4 c. brown sugar
1 c. ketchup
2 Tbsp. prepared mustard
2 Tbsp. Worcestershire sauce
1/2 c. chopped onions

In large bowl, combine first six ingredients and spices. Shape into loaf and place in loaf pan. Combine topping ingredients. Spread 1/2 of topping mixture into thin layer on top of loaf. Bake, loosely covered with foil, in 400 degree oven until meat is almost cooked through. Drain off fat. Add remaining topping mixture and bake uncovered another 10 minutes.

So many variations-HG but I use 2 lbs ground sirloin. In a bowl mix 2 eggs, ketchup, mustard, worstershire sauce, horseradish, salt/pepper, garlic powder, packet Lipton's onion soup. Add meat and mix-I then add oatmeal. Form in a loaf, score and moisten with beef broth- bake 350 1 hr, basting with beef broth if you want, let sit about 15 min.

Hmmm.......think I have everything for that except maybe the oatmeal. Could I use breadcrumbs instead??

Meatloaf is very forgiving and everybody's is a bit different. You could add just about anything, as long as it will hold its shape. I use breadcrumbs most of the time, but have even used Grape Nuts cereal when I didn't have breadcrumbs.
