Cole Slaw (KFC STYLE)

Ingredients

8-1/8 cups finely chopped cabbage
· 1/4 cup shredded carrot
· 2 tablespoons minced onion
· 1/3 cup granulated sugar
· 1/2 teaspoon
· 1/8 teaspoon pepper
· 1/4 cup milk
· 1/4 cup buttermilk
· 2 tablespoons lemon


· 1/2 cup mayonnaise
· 1-1/2 tablespoons white vinegar


1. Make sure that the cabbage and carrots are chopped up into a very fine pieces like the size of rice grain.

2. In a bowl, combine the buttermilk, mayonnaise, milk, sugar, lemon juice, salt, vinegar and pepper.

3. Beat the mixture until it is smooth.

4. Add the cabbage, carrots and onion, then mix well.

5. Cover and refrigerate the mixture for at least 6 hrs before serving.

Hi, gang. Tonight, I pan-fried some pork chops and had spinach and corn. I decided to keep a couple of chops handy for tomorrow's lunch.

And for dessert?? Molten caramel chocolate cake, and that's from the Betty Crocker Warm Delights series. Give it a try.

We have freezing rain here...so Chicken noodle soup and grilled cheese sandwiches. Hot tea also. Hubby will have pecan pie later w/ice cream. Not sure if I will eat anything later.

This weather makes me less hungry. And a big hello to y'all from freezing Missouri...

Roast pork loin and kraut with mashed potatoes and green beans was on the menu tonight at Chez KSHE, paired with a lovely french Chardonnay, followed by apple streudel and espresso

Finally fried up the spaghetti leftovers. Not great because I didn't care for the sauce. Had a caesar salad and biscuits with it. Oh, and I made banana bread. It was very good, piping hot out of the oven, slathered with butter!

kshe-your dinner sounds so much better than mine! Do you cook the kraut with the pork?

I copied the mac and cheese recipe and I am definitely going to try it soon!

I brown the pork in a skillet first, then put the kraut down, and the pork on top in a glass casserole dish.
I use my grandmothers recipe to make the kraut, with white wine, onions, apple, a bit of sugar, and caraway seed. I actually dont use the caraway much, DH hates it so I use fennel seed, its mighty tasty!

Tonight we have a friend staying over because the weather was a pain for his hour commute home. It is fun having guests! We had a nice night watching The Bachelor (i made them) and 24

The guys cooked for ME while i ran on the treadmill. It was good too! We had a baked penne with spicy sausage, garlic, onions, green peppers, mushrooms, basil, and tons of mozzarella cheese. Garlic bread and a cabernet-shiraz blend.
We all had 2nds and there are still leftovers....I am glad they cooked a huge panful.

Brownies with walnuts and fudge frosting for dessert.

I have had NO imagaination lately...alot of boring meals. Tonight was a really sad version of "cheeseburger pie". Tue is my "no cooking" night, so hopefully I'll have a good idea or two by Wed!

For now though, I'm reading what you all had, hoping something grabs me!

Ummm, sounds good, except I don't eat meat. Do you think it would work to substitute eggplant for the pork? I'm not a good cook, so perhaps this is a terrible idea. Please be candid!

I dont think the eggplant would stand up to the acid in the wine and kraut.......hhhmmmmmm, wonder if we could get tofu to stand in?
