I'm sure we would have liked it if we had cooked it that way. I doubt we would try again, tho - neither one of us liked it at all.

No, we did it like we do haddock (duh!) - put it in an alum. foil pouch with butter, S&P, onion and garlic powders. Baked it at 350 for about 30 minutes, I think. Salmon does well that way, too. Catfish not so much.

Hey, you copied our dinner tonight! Except for the baked potatoes.

Our ribs last night were wonderful. we used Emeril's SW seasoning for a dry rub w/S&P. Cut the rack in 1/2, threw them on the grill for about an hour, put our favorite BBQ sauce on for the last 15 min. Tender, tasty and meaty. The best.

I just made a chocolate cheese cake......an improvised variation on Amber's grandma Craine's cheese cake. It looks beautiful and since I don't usually make dessert....I am very proud of it. I am working on my Tex Mex stuff I already mentioned and it is all coming together. I bought some pretty spring daffodils that look great in the green breakfast nook with the sun pouring thru the bay windows...

I got to tell you ..... I love my life!

For supper tonight I bought some shelled fresh cold water Maine shrimp to go with the scallops and they will be in a sauce made from a reduction of heavy cream and parmagian cheese served on a bed of thin linguini; I am going to throw some some fresh baby spinach into the boiling water with the linguini to give it a special touch and a nice presentation.

Wow such fabulous sounding dinners. I now want lobster. I haven't seen anything that even looks like lobster here.

Tonight Roast beef with gravy and mashed potatoes.

Jaxson- I bet that call woke you up and gave your "heart" a jolt. Gotta love kids.
