I've got to get my three-meat calzone ready for tomorrow night. Can't wait to dig in to that! I'll even have some terrific Prego tomato sauce to go with it.

Boneless chicken breasts w/mandarin orange sauce. In a pot: drain the orange juice, add about 1/2 cup or so O.J. - some cinnamon, a little ginger (love it), add some corn starch to thicken - then dump in the oranges. Add to the sauteed/grilled chicken - Yummy. (also good w/pork chops)

Default good grief!

Well, once again, I was the only person at work today, besides the office staff..... and that aint the half!
I was working with a fellow designer this afternoon, and one of the track lighting unites started spewing sparks right over our heads!!!
Called the fire dept, had to close early, of course....... but it gave me time to come home and cook. Here is what I cooked, this recipe is WONDERFUL!!!!! Am posting it so y'all can copy and paste without my blatherings about my day.......

Default Farfalle with gorgonzola

1 cup 1/2 and 1/2
1 cup crumbled gorgonzola or blue cheese
1 lb farfalle pasta (bow ties)
2 cups arugula, trimmed of thick stems, and coarsly chopped
1 cup julienned sun-dried tomatoes
grated Parmesan cheese

Boil bowties according to directions on box, until just tender, not mushy. Warm 1/2 and 1/2 and gorgonzola until cheese melts and becomes thick.
Drain pasta, add sauce mix, arugula, tomatoes and plenty of fresh-ground pepper, toss, add Parmesan to taste.
I added sliced, grilled chicken breast on top, and some foccocia bread, it was really, really good!

Had home-made enchilladas, with mexican rice. (Near East Brand - very good) As I said in another area of the forum, I'm excited for leftovers tomorrow!

Tonight will be the shrimp stir fry we were supposed to have yesterday....with some leftover green chile tamales as an appetizer!!

Okay, since we always cook for lunch and only have a smaller dinner it's always "What's for lunch today" for me.

I had cooked potatoes along with oven steaks. The steaks are beat really flat and then folded in the middle. Filled with a slice of cheese and a slice of ham. Shortly fried in a pan than it has to move into a oven pan and is cooked in this delicious garlic cream sauce. Hmmm...

This sounds so good. Think I'm going to try it with pork--hubbies request when I read this to him! Tonight I am finally going to make my pot roast with all the trimmings and maybe tomorrow night I'll give this a try. About how much corn starch do you use to thicken up the orange sauce?
