I have to admit Carnitas is simply one of my favourite dishes when done well. I had it in Edinburgh of all places which was to die for. I still dream of it ! It was so moist and succulent, the pork taste was out of this world, it was rich without tasting fatty, melt in the mouth deeeeeeeelicous !

I had some fantastic ones in Mexico too but some places I have tried have simply not been that great.

How do you make it ? The Chef I spoke to in Edinburgh ( who was Mexican) cooked it really slowly, on really low heat for about 3 days and then really crisped up on the top just before serving.

I think I am starting to drool again ! Must stop.

Maybe I should have said "my partner feels like a mongoose! " (though I am not really sure what a mongoose feels like )

I've never heard of the Fortunes. I thought it sounded like a Paul Simon lyric actually.

Highlands Gal - I am so happy for you that everything went well! Also, good luck on that old pesky interview! You'll do wonderfully!

HawaiiLover - So sorry to hear you fell! Glad it wasn't something worse than bumps and bruises - however those can be pretty painful too! Thanks for the recipe!

Afternoon all....someone was looking for a Boston Creme Pie recipe..I am from the Boston area so I guess I can share mine. I haven't made this in years. It was my son's favorite.
I will tell you that it is a lot of work but worth it as it has the authentic taste:

Boston Creme Pie

Cake

1 1/4 C flour
1 cup sugar
1 1/2 tsp. baking powder
1 egg 1/2 tsp salt
3/4 cup milk
1/3 cup shortening
1 tsp vanilla

Heat oven to 350. Grease and sugar (instead of flour) round cake pan. Measure all ingredients into a bowl. Blend on low then to high speed. Pour into pan and bake 35-40 minutes.

Filling:

1/3 cup sugar
1 1/2 cups milk
2 T cornstarch
2 egg yolks (slightly beaten)
1/8 tsp salt
2 tsp vanilla

Blend sugar cornstarch and salt in a medium saucepan. Combine milk and egg yolks. Gradually stir into sugar mixture.
Cook over medium heat stirring constantly until mixture thickens and boils (like pudding). Boil and stir one minute longer. Remove from heat and stir in vanilla. Cool

Glaze:

Melt 2 ounces unsweetened chocolate and 3 Tablespoons butter over low heat. Remove from heat and stir in 1 cup confectioner's sugar and 3/4 tsp vanilla. Mix in about 2T hot water..1 tsp at a time until glaze is at a proper consistency.

After cake is cooled...slice in half, put filling inside, cover, drizzle chocolate icing over the top and it will run down the sides.

Enjoy and don't forget to refrigerate!!!!!!!!!!!!!

Not sure for tonight. DD wants MEAT & POTATOS but not CHICKEN. She really wants steak but I won't be albe to get to the meat market in time and I don't like the Angus ones at my local market. I'm thinkin maybe a really big juicy cheese burger and some garlic mashed potatoes. Oh and some peas for her and her alone. Don't like them....won't eat them. Wish I had some of Nomad's tomatoes. That would be tasty.

I may be strange but I would take a big juicy bacon cheeseburger over a steak anyday.

Steak is best on the grill but I have to admit that on Valentine's Day hubbie did the cooking and he did some nice steaks and baked potatoe.
Tastes great when someone cooks it.

Lacey I too love the burgers especially with aged sharp cheddar and onion or gorgonzola. Not great for the waistline but it does wonders for the taste buds.
