Ribs tonight. I slow-cooked them in the oven for a few hours in bbq sauce I'd made. Then I grilled them on the barbeque for a bit. Served with coleslaw and roast potatoes. My son gobbled down almost two racks himself. You'd never know it, he's like a beanpole.

Vichel for those days! I used to eat a whole rack-now 2 or 3 ribs is enough. Bless that boy. Hope your family fared well thru the fires.

amber 2 times calling you is not bad one of my kids will call 14 times it seems like if I am not home when they get here or if I send after something.

Vichel boys just seem to go through that phase and never gain any weight. I often wondered where mine put it because it never shows up around their waist.

Tonight will be breaded tenderloins or pulled pork sandwiches after the swim meet. Off to the check up have a great day!

I have to admit, I have never been as inspired as I have been sense starting this thread. It has definately helped me lots! Not only to help me get involved in my cooking again but also to help me stop smoking. Hey, I appreciate each and every one of you!! Thanks....
I'm thinking chicken tonight. I have some skinless chicken breasts but they have a bone in so any ideas on how I should prepare these? Or I have some chicken thighs with the legs attached that I usually bake with soy sauce but could sure use a different idea here too. I could even shred the chicken and use it in some kind of dish just not sure what so I am all ears!!

Cyn.....last night I baked chicken leg quarters....the big thigh and drumstick portion....I just used salt and pepper on them .... put some whole garlic cloves under them to roast with the chix, and baked them.....(they did take longer than I expected--well over an hour!) We had baked sweet potato and green beans with them.....simple roasted chicken......they would have been good with some stuffing (they gave out a lot of chicken fat.....so I dont think stuffing in the same pan)....my DP who likes his meals less fussy and more "straight up" and who likes dark meat much more than white meat...really enjoyed them. (Its a good thing because I bought 15 pounds of them...)

Cyn what about chicken and rice? Brown chicken, remove. Saute celery, onions, carrot. Add rice and saute'. Add chicken broth or stock, water, white wine, chicken, tarragon. Cover and either low/slow bake or cook on stove top. You can add peas and pimentoes at the end.

I don't think it's worth it.. microwaved bacon is so soulless.


I don't know what's for dinner tonight.. if I say onion pie I know it won't happen...

I'm getting some good ideas here...got me thinking! You know me Lacey..I need amounts! Aprox. how much rice and how much broth? Probably use the same amount as if I'm just making up regular rice?
Elston, if you just bake the chicken with only s&p does the skin crisp up?

It did.....but now I remember....I put a little olive oil on it to get it started. I rather like Lacey's suggestion more than mine...
