This is shaping up to be a week of dining out for us. Tonight was Mexican food - husband was off shopping and I worked late, so we met for dinner. Tomorrow night is Thai food with some friends, and Friday night is our company dinner.

We're eating out tonight - got shopping to finish up, getting ready for family to come in this weekend...just not enough time to cook!

We spent the day Christmas shopping and had a late lunch so that pretty much messed up dinner for us. We need somthing not to filling. Decided to make some biscuits with creamed chipped beef over them. Easy, fast, not to much clean up (I'm tired after walking the mall), and not to heavy. Sure wish I had finished with the shopping today but we didn't....it's back to the stores tomorrow!!

Seafood chowder - cream, potatoes, haddock, shrimp and fresh scallops. The shrimp and scallops were caught by my BIL.

WOW!! That sounds wonderful. I have no clue how to make a seafood chowder but it sure sounds good!

We decided we just aren't hungry enough to have anything...guess I'll save the idea of creamed chipped beef on biscuits for tomorrow night!! Even though I'm not the least bit hungry that seafood chowder sure sounds good!!

I left out the butter. Ooops!

Wash and cut three large potatoes into bite size pieces. Barely cover them with water and simmer until almost cooked. Add a haddock fillet, a pint of cleaned shrimp and a pint scallops on top of the potatoes and simmer until the fish is cooked. It takes just a few minutes because seafood cooks quickly. There should be very little water left in the pan. Add a half gallon of cream (milk, half and half, whatever you'd like) and a stick of butter. Keep the heat on low until the cream is warm. I let the chowder set at least an hour before serving. It's very simple. I usually bake either organic whole wheat or oatmeal rolls to go with this.
