Here is what I am going to do with my 3 lb roast.....

1. rub with kosher salt and wrap and refrigerate
2. Pre heat oven to 450
3. season roast with soy and worchestershire sauce and a little butter on top
4. put in oven and cook for 3 mins per lb. (9 mins.)
5. TURN OFF oven and cook for 1 1/2 hour without opening the door!

Nope I am going with Kelsie's

Elston, no wonder I can't cook the darn things, didn't know there was a difference. Shoot....
Your recipe sounds wonderful by the way.

Jaxson, I am starting on week three no smoking. Doing great. Neighbor is killing me though. They smoke outside and I can smell it when the windows are open. It doesn't stink yet. Getting there though. Each day is a little easier.

elston, if you only roast 3 mins. per lb. at 450 and then turn the oven off;
between the pre-heating and roasting your 3 lb. roast, the internal temp of the oven walls will not stay hot enough to roast to your desired temp. Your roast will most likely be rare and the outside dry. By pre-heating to 500, dropping to 475, and roasting 7 mins. per lb., (mine was roasting for 28 mins. total), turning off the oven DO NOT OPEN THE OVEN DOOR FOR 2 1/2 HRS. it comes out the perfect med rare, tender, succulent, moist. kelsie's in the kitchen again.

MTH good for you girl-keep it up.

Kelsie-I have to try that because I never have had luck with eye round. Now I want roast beef.

We are in such a white-out. We went to town in ice-had to pull over for windshield to heat up and de-ice. Roads are just awful and thankfully not many are out. We crept home in pure white.

Mr. L had liver n onions,mashed and veggies for lunch out. Me poached eggs!

Lacey, woohoo! This is such wonderful news. Can you pick me up and drop me off in Northfield, I can then hitch hike down to Tuckerton and then sneak into the wedding rehearsal and then the wedding, no one would even know.
Have a wonderful, safe trip my friend.

DH is on the wacky shift today, so dinner at 3:30 will be the leftover sausage and peppers from yesterday. I just had another sloppy joe, in between ironing.

Can someone PLEASE hide my iron I'll cook for you, I really will.
